← Return to Apiary HomepageLong before grape vineyards dominated Europe, monastic cellars perfected the art of mead—fermenting raw wildflower honey with pure spring water and wild yeasts. In the damp stone cellars of Baronial Acres Apiary, we continue this noble fermentation tradition.
We never boil or flash-heat our honey prior to fermentation, preserving the delicate volatile aromatics of Washington County wildflower blooms. Aged slowly in neutral oak casks for 12 to 24 months, our meads achieve a smooth, complex balance ranging from crisp, dry table meads to rich, warm spiced dessert nectars.
⚖ Legal Distribution & Allocation Notice
Private Member Allocation Only: Subterranean cellar meads produced at Baronial Acres Apiary are distributed exclusively to registered Grange Association Members and crop share patrons under private farm contract. Mead allocations are strictly not offered for general public commercial retail sale.
* All participating share members and recipients must be at least 21 years of age. Government-issued ID verification is required upon farmstand pickup or private allocation delivery in compliance with Oregon state regulations.
I. Oak-Aged Cellar Releases
Monastery Traditional Dry Mead
100% raw spring wildflower honey fermented dry and aged 12 months in neutral oak. Crisp, subtle floral nose with bright acidity and a clean, dry white wine finish.
Claustral Spiced Metheglin
Raw autumn honey fermented with estate-grown rosemary, cinnamon, clove, and sweet orange peel. Warm, deeply aromatic, and comforting—ideal for cool winter evenings by the hearth.
Orchard Cyser (Apple Mead)
Fresh-pressed unpasteurized juice from our antique cider apples fermented together with raw estate honey and aged in toasted oak. Balanced apple acidity with a rich honey body.
Currant & Berry Pyment / Melomel
Estate Pink Champagne currants and blackberries steeped in raw wildflower honey wine. Vibrant ruby-red color with tart berry notes and a velvety honey finish.
