The Honey & Hive
Nestled along the timbered shelterbelts and wild clover pastures of our 41.62-acre estate, our apiary features thirty established Carniolan honeybee (Apis mellifera carnica) colonies under the court of Queen Aurelia I. Famed throughout monastic history for their gentle temperament, rapid spring buildup, and extraordinary thriftiness through winter.
While our 8 oz, 12 oz, and 1 lb jars are bottled fresh weekly, our 2 lb Limited Reserve Buckets and 5 lb Pantry Pails are drawn directly from raw, unheated comb tanks that undergo a traditional fortnight (14-day) to 30-day settling and curing period. This natural lag allows native pollen, propolis micro-compounds, and natural enzyme activity to stabilize without artificial heat.
